Yet another roasted veggie salad with my previously used honey mustard tofu recipe to top it off. Easy to meal prep and eat throughout the week! I marinated the veggies in a combo of balsamic glaze and water and then just threw them in the air fryer with the sweet potatoes and ofc topped them with some sea salt and pepper 🙂 See the full recipe below !!
-kale (massage with olive oil + black pepper)
-Brussels sprouts (marinated in balsamic)
-yellow squash and zucchini (marinated in balsamic)
