Vegetable + lentil tomato curry.
This one pot wonder packed a punch! It has so many nutrients and SO much flavor. I decided to kick it up a notch with some red pepper flakes and it was even a bit too spicy for me! (Now i know my spice limitations haha). Anyways the ingredients are below … be sure to check them out:)
-lentils (I used canned, brown lentils)
-tomatoes (canned or fresh)
-garlic sea salt + black pepper (linked on story)
-pumpkin seeds (optional)
-red pepper flakes (optional)
-sriracha (also optional, and honestly not recommended)
