SHREDDED BROCCOLI AND CAULIFLOWER SALAD (w/ date paste!)

This recipe was so fun to make. It was a good reminder of summer freshness while easily pairing with warm comfort foods. Thanks to Trader Joe’s and their packaged broccoli slaw this recipe only took a few minutes to make. It’s also great for meal prep since the slaw does not get soggy easily. Recipe:
-1/2 package of broccoli slaw from Trader Joe’s
-1/2 cauliflower head finely chopped
-2 tbsp date paste
-1 tbsp tahini
-1/2 sliced avocado
-1 finely chopped date
-1/4 red onion chopped finely
.
Clearly you need a good knife for this recipe as you will need to finely chop many vegetables! This salad is soooo delicious and can be incorporated into a dish as a side slaw or even into a larger salad base as a topping that gives the salad an added sweetness and crunch. I used the same balsamic marinated veggies (with some added red onions) and roasted them in the air fryer with some frozen peppers and onions, and cauliflower rice, and topped it with some air fried crispy kale and a high protein veggie burger from @traderjoes

Veggie GALORE sandwich

Let me tell you. The high protein veggie burger from Trader Joe’s is the best thing you will ever taste. My friend described it as tasting like breadcrumbs and I couldn’t agree more. It’s so delicious and nutritious!! Best combo 🙂 I also added some kale and frozen peppers and onions which I threw in the air fryer on the roast setting with some olive oil, sriracha, nutritional yeast, salt and pepper. You can also cool these on the stove top or in the oven super easily. I didn’t cook the red onions because i wanted an extra crunch but you can throw them in with the other veggies if you like them better roasted and toasted !! For the sauce I tried to make vegan mayo with aquafaba (chickpea juice) and kind of failed due to not actually measuring correctly, but it was good nonetheless. I will post the recipe for aquafaba mayo on my story later! For now, here are the ingredients for the sandwich.

Yet another roasted veggie salad with my previously used honey mustard tofu recipe to top it off. Easy to meal prep and eat throughout the week! I marinated the veggies in a combo of balsamic glaze and water and then just threw them in the air fryer with the sweet potatoes and ofc topped them with some sea salt and pepper 🙂 See the full recipe below !!
