This is a classic turned vegan and healthy!!! I actually love sausage do being vegetarian / vegan can be hard … but this vegan sausage makes it so easy! It actually tastes just like sausage and browns amazingly. To add sweetness to this dish I added a few tablespoons of my date paste. The instructions to make date paste will be on my story. If you do not have dates you can use maple syrup or if you do not want any sweetness you can just use sriracha! If you want to make this the recipe will be below!

Recipe:
-1 pepper
-1 vegan sausage (from Trader Joe’s)
-1 tbsp tomato paste
-1/2 yellow onion
-2 tbsp date paste
-red pepper flakes
-salt + pepper
-drizzle of sriracha

“SOY CURLS AND BRUSSELS”

I don’t know about you, but I never heard of soy curls until recently and when I did I decided to purchase them on amazon right away! I will admit they sat in my pantry for about 2 months because I had no idea what to do with them, but recently I decided to open them up and give them a try and they are amazing! They are basically just soy protein shaped into chicken like pieces. All you do is soak them in water then either sauté them in a pan with oil or roast them in the airfryer like I did. Anyways, if you are interested in the recipe please scroll below:)

Reciped:
-Brussels
-soy curls
-sriracha
-broccoli (I used frozen)
-tamari
-salt and pepper
-sesame oil
-everything but the bagel seasoning
-cauliflower rice ( I didn’t have it, but it would be so good with this!)
*i just mixed everything together and roasted them in the airfryer for about 15 mins at 350! You can roast in the oven as well, but I recommend pan frying the soy curls if you don’t have an airfryer.

HEALTHY 8 ingredient BANANA BREAD.

I was just craving something sweet last night as I was watching Ratatouille (Yes the Disney movie) and since I am leaving for break soon I had just about nothing to work with except with some flour, sugar, overripe bananas, baking soda, aquafaba (leftover chickpea juice), maple syrup, some slivered almonds, cocoa powder, cinnamon, and coconut oil, but turns out that’s all I needed for this recipe! I made this in about 5 minutes popped it in the oven for 45 mins and ate about half of it right when it came out of the oven, after topping it with plenty of banana slices and drizzling it with maple syrup. I was so surprised by how good this was. I mean it was amazing (me eating 1/2 of it as evidence). If you want to give this recipe a try (which I recommend you do) scroll down!
Recipe:
-6 tablespoons of aquafaba
-2-3 ripe bananas
-1/4 cup water or plant based milk
-1/4 cup coconut oil
-1/2- 3/4 cup of sugar: brown, cane, coconut, etc.
-1/8 cup maple syrup (optional)
-2 cups flour (I used whole wheat, but oat of regular will work too)
-1 tsp baking soda
-1/8 cup cocoa powder (optional)
-3 tsps cinnamon (optional)
-3 tsps vanilla extract
-vanilla bean extract **
-1 tsp salt
-almonds to top
* I got vanilla bean extract from Trader Joe’s. You can use the tiniest bit and it adds so much flavor.

Instructions:
-whip aquafaba until white peaks form
-add banana and mash
-add all other ingredients and mix
-place in bread pan or reg cake pan like I did and coat with coconut oil to make sure it doesn’t stick
-bake at 350 for 45-50 mins until toothpick comes out clean

Super easy granola made in 10 minutes!!! Wooohooo! Recipe is below. Inspired by @saoirseher3 recipe is below:)


Recipe:
-rolled oats (2 cups)
-pumpkin seeds (3 tbsp)
-coconut strips (1 big handful)
-pumpkin pie spice (2 tbsp)
-coconut oil (2-3 tbsp)
-honey (2-3 tbsp)
-cinnamon (2 tbsp)
-salt (sprinkled)

Put in airfryer for 5-10 mins or oven at 350 for around 30 mins (make sure to mix halfway through)

“HUG ME BROTHA” Miso Soup

This miso soup really does feel like a hug in a mug (or bowl). Ever since my newfound love of tofu miso soup has been on my mind because I never got to truly experience it since I always picked out the tofu! So after grocery shopping @traderjoes this week I finally had all the ingredients to make this delicious meal. And let me just say it was EXACTLY what I needed in the moment and more. My stomach was feeling funky all day and this cured it instantly and revved me up to play some tennis! This soup was make in one pot and only took me about 30 minutes to make. I would 100% recommend making extra though because it stores well and is so good the next day (The tofu really soaks in the flavors). Anyways if you feel like you need a hug give this recipe a try 🙂 hope you like it!



Miso Soup:
-miso soup broth from Trader Joe’s
-bok Choy
-scallions
-yellow onion
-firm tofu
-garlic clove
-ginger

Instructions:
1. Place the broth in the pot
2. Cut the white bottoms of the scallions (also known as green onion) into fine pieces and add to broth
3. Cut yellow onion and add to broth
4. Add 1 tbsp of minced ginger to the broth
5. Add 1 garlic clove chopped finely to the broth
6. Cut tofu into cubes and add to broth
10 MINUTES LATER WITH STOVE ON MEDIUM-HIGH
7. Add Stems of Bok choy
COOK FOR 5 mins
8. Add bok choy leaves
COOK FOR 2 MINS
8. Garnish with the ends of the green onion finely chopped as shown
… and wala! You’re done! I probably made it into more steps than necessary but you get then gyst (add all ingredients to broth except Bok choy …) either way I hope you enjoyed and please give me a shoutout or a follow if you liked this recipe!

I will admit this is very similar to my previous Mexican bowl, but even so it has its own unique flavor (my cheesiness is a 10/10 today). Anyways this salad is basically the lighter and fresher version of the previous Mexican bowl, as well as the less spicy one + it has roasted cauliflower in it which is my favorite!! 🙂 see the recipe below!

Ingredients:
-paprika roasted sweet potato + cauliflower
-red onion (finely chopped)
-quinua
-corn (also roasted in paprika… can you notice a trend here lol)
-black beans
-arugula
***For the dressing I used my cilantro lime avocado dressing I have pre-made in the fridge! This is a super easy dressing to make all you need is
-1/2 avocado
-2 tablespoons Dijon mustard
-handful of cilantro
-1/2 can chickpeas
-splash of water
-1 / 2 lime squeezed
– salt
And you just blend these all up until it’s a liquid consistency! I do not recommend making too much of this though since it only stays in the fridge for a few days max since the avocado begins to brown making the dressing look super funky (but tbh it still tastes good)

Nothing sets you up for a good morning like some steel cut oatmeal … high in protein, nutrients, and the perfect base for some even yummier ingredients! Even though it does not feel like fall, I am already in that fall mindset so I made this oatmeal slightly fallish (Ik that’s not a word lol) by adding cranberries, cinnamon, and pumpkin seeds! Check out the recipe below 🙂

Ingredients:
-steel cut oats
-dates
-dried cranberries
-almonds
-pumpkin seeds
– @arbonne vanilla protein powder
-honey (or agave)
-optional, but a great option, is to add quinua!

Instructions:
-heat up oats with water and add in some chopped dates, cranberries, and cinnamon. Heat in pot until creamy. Serve in a bowl and top with desired ingredients (such as these!) and drizzle with honey or agave. Super easy, so delish!!!!

Lunch game strong: balsamic + mustard tofu and veg bowl.

This lunch is great because it can be prepped and cooked in less than 1/2 hour! I did use an air fryer to make the kale, vegetables, and tofu, but you can use the broil option on your oven to give them the same crisp, you just may need to use more olive oil. Also, not mentioned in the ingredients below is the quinua I added!!

Balsamic + Mustard Marinated Veggies:
-zucchini
-yellow squash
-red onion
-brussel sprouts
-balsamic glaze (2 tblspoons per 1/2 cup water)
-Dijon mustard (2 tablespoons per 1/2 cup water)
-Black pepper
-red pepper flakes (optional)
*marinate overnight (or for a few hours)
*if air frying only include some liquid in the fryer with the veggies
*if cooking in oven you can put all of the marinade on the pan with the veggies to cook in and if u want to crisp them up you simply broil them for a few minutes once they’re cooked through

-mustard
-nutritional yeast
-black pepper
-red@pepper flakes
-sea salt
-honey
-olive oil
-paprika or sriracha (optional)
*marinate and then once ready to cook, coat them with nutritional yeast and black pepper to get crunchiness
