Today’s lunch: Mixing it up with Mixed Greens:)

Today I decided on a refreshing light salad since it was so sunny and nice out, but of course I added some roasted vegetables to make it a little more fall like. To top it off I made a tahini balsamic dressing which will be shown below. Also below are all the ingredients used to make this meal:)

Salad:
-mixed greens
-apple (I used gala, but you can use whatever you want)
-pickled red onions (white vinegar, red wine vinegar, mustard, agave, pepper)
-roasted carrots (dried parsley, olive oil, nutritional yeast, salt and pepper)
-air fried crispy chickpeas (Chile powder, olive oil, salt)
-tofu (tamari, nutritional yeast, Chile powder)

Dressing:
-tahini (1 tbsp)
-red wine vinegar (2 tbsp)
-Dijon mustard (1 tbsp)
-balsamic glaze (from TJ’s; 1 tbsp)

Today’s breakfast: Berry Baked Oatmeal- decomposed.

Today I had another piece of my surprisingly amazing baked oatmeal. I say surprisingly because I am not by any means a good baker, mostly because I do not follow recipes / use measurements.. but nonetheless I think I nailed this one. Plus, in order to post about it, I recorded my measurements! This baked oatmeal is a time saver. Whenever I need a snack I just take a slice, throw it in the microwave, and dig in. Plus, it makes a delicious breakfast since oats fill you up for a long time and it takes less than a minute to prepare( if you even want to heat it up). This morning I had it in almond milk, so like a creamy cereal / granola sort of thing and it surpassed all my expectations. This is better than cereal, and I love cereal so that is a hard statement for me to admit. Anyways this recipe made me a approx. 6 inch circular pan full of baked oatmeal, which will last me all week! Just double the ingredients or half them to suit your needs:)

Ingredients:
-3 cups rolled oats
-1 1/2 teaspoons baking powder
-1/2 teaspoon salt
-2 1/2 cups of your choice of milk (I used oat, but almond is great too)
-3 cups frozen berries (I used blueberries, raspberries, and blackberries)
-1/2 cup of honey (or your sweetener of choice ex: maple syrup)
-*6 tablespoons of aquafaba (mix until white and fluffy)
-3 tablespoons coconut oil
-chia seeds to top
*3 tablespoons of aquafaba = one egg, so you can replace this ingredient with 2 eggs if desired

Instructions: to cook this I just combined all of the ingredients and put them in my pan, which I lightly coated with coconut oil. Theoretically it may be best to make layers of oats and berries, but I think this way turned out absolutely fantastic so do whatever you want. Anyways, let me know your results if you try this recipe!

Mexican Cauliflower Rice — today’s lunch was made in less than 5 minutes and in one pan, yet had so much flavor and spice that I needed to down a glass of milk (almond) to just finish it!! All of the base ingredients are non perishable items as well so you can buy them in bulk and make variations of this for weeks to come! See below for the recipe.

Ingredients:
-about 3 tablespoons of salsa (I used habanero, but less spicy is fine too)
-frozen vegetable mix (I used the corn, edamame, and red pepper mix from you guessed it, Trader Joe’s)
-cauliflower rice
-canned tomatoes (optional if you use mild salsa, then you could just double the salsa)
-black beans
*avocado (or my avocado, cilantro, lime aioli) would be AMAZING on top of this but I didn’t have any:(

Today’s bowl’s evolution. Decided I needed more protein so added some almonds and then an egg! Also for flavor I added some Tahini:) super easy meal!
Ingredients:
-1 handful of kale
-1 small apple
-tahini
-1 egg
-2 tablespoons of balsamic (I use balsamic glaze from Trader Joe’s)
-1 tablespoon of olive oil to sauté kale in
– 1 date chopped (optional, for added sweetness)
