Strawberry crumble pancakes :)))
If you can’t tell, I’m kind of obsessed with pancakes, specifically the high protein ones from @kodiakcakes . They allow me to indulge in my favorite flavors while also giving my body the fuel it needs to go about my day! These pancakes were a little more on the indulgent side since I added whipped cream and butter, but everyone deserves a treat every now and then right?! Also, this recipe only has 5 ingredients, so it’s an easy indulge! Anyways, see below for the recipe.

Ingredients:
-kodiak high protein pancakes
-cinnamon and/or pumpkin pie spice (add to pancake mix)
-frozen strawberries (heat in a pan with coconut oil)
-butter (or coconut oil) to grease pan
-nature valley granola bar (you can also make your own, but I just crumbled the nature valley bar to make this granola)
-whipped cream (optional)

Mexican Cauliflower Rice — today’s lunch was made in less than 5 minutes and in one pan, yet had so much flavor and spice that I needed to down a glass of milk (almond) to just finish it!! All of the base ingredients are non perishable items as well so you can buy them in bulk and make variations of this for weeks to come! See below for the recipe.

Ingredients:
-about 3 tablespoons of salsa (I used habanero, but less spicy is fine too)
-frozen vegetable mix (I used the corn, edamame, and red pepper mix from you guessed it, Trader Joe’s)
-cauliflower rice
-canned tomatoes (optional if you use mild salsa, then you could just double the salsa)
-black beans
*avocado (or my avocado, cilantro, lime aioli) would be AMAZING on top of this but I didn’t have any:(

Easy peasy apple + arugula salad! The key: slice the apples thinly and pickle the red onions! The best part about these pickled red onions is that you can use the pickling juice as a dressing!

-apple (I like fuji, but whatever apple works)
-red onions (pickled- recipe below)
-arugula
-roasted chickpeas (recipe below)

Pickled red onions:
-Dijon mustard
-sweetener (I used agave, but honey works well too)
-white vinegar
-red wine vinegar
