A KRISPY KALE DAY ~ cauliflower rice + Krispy kale ~


If this looks familiar to you that’s because it is. You know how I love my Krispy kale and cauliflower rice :)) for this dish I threw in the cauliflower rice and kale with some tamari and nutritional yeast glazed tofu, Brussels sprouts, cranberries, pepitas, and red onion seasoned with a whole lot of rosemary (inspired by @tara_powell) and some balsamic, olive oil, and sea salt of course. Oh and I almost forgot, I added some chopped garlic to give it that extra somethin’ super easy delicious and nutritious! (Wow I feel / sound like a mom) anyways, scroll below for the recipe.



Recipe:
-1 cup cauliflower rice
-handful of kale
-red onion (2 tbsp chopped)
-Brussels sprouts (1 cup)
-dried cranberries (2 tbsp)
-pepitas (2 tbsp)
-tofu (~8 small pieces)
-tamari (3 tbsp)
-nutritional yeast (2 tbsp)
-salsa (optional, 1 tbsp)
-balsamic glaze (2 tbsp)

Mexican Cauliflower Rice — today’s lunch was made in less than 5 minutes and in one pan, yet had so much flavor and spice that I needed to down a glass of milk (almond) to just finish it!! All of the base ingredients are non perishable items as well so you can buy them in bulk and make variations of this for weeks to come! See below for the recipe.

Ingredients:
-about 3 tablespoons of salsa (I used habanero, but less spicy is fine too)
-frozen vegetable mix (I used the corn, edamame, and red pepper mix from you guessed it, Trader Joe’s)
-cauliflower rice
-canned tomatoes (optional if you use mild salsa, then you could just double the salsa)
-black beans
*avocado (or my avocado, cilantro, lime aioli) would be AMAZING on top of this but I didn’t have any:(

Sesame + Teriyaki Salmon and Tofu over Cauliflower rice! I’ve been really into testing out Asian stir fry type recipes and this one was a BIG hit. Plus, it was super easy to make! I actually just used one pan and used the same sauce throughout! See the full recipe below.

-frozen cauliflower rice (I use Trader Joe’s)
-frozen peppers
-yellow onion
-string beans (I used frozen)
-salmon
-tofu

Marinade (used for the tofu, salmon, and the cauliflower rice!)
-sesame oil
-red pepper flakes (optional)
-teriyaki sauce
-soy sauce (optional)
-sriracha (if you like spice)
-everything but the bagel seasoning
-green onions (optional)
