This salad has the perfect crunch and saltiness to it! It can be paired with a bigger meal or eaten as a full meal itself, depending on your hunger level. Also, to make it more filling you can add some marinated salmon (recipe on my previous “Salmon Teriyaki” post) or tamari marinated tofu. Either way it’s delicious!

This dish truly made me 🙂

The perfect combination of sweet and spicy, air fried plantains, what could be better?!? To make this dish it cost me under $5 (and I had plenty of pepper and chickpeas to save for another recipe). For this recipe I used my leftover sriracha tahini sauce that I used in my previous kale salad. To give it an extra kick, and add some Mexican flavors, but if that doesn’t appeal to you, just add more coconut milk and some tahini (optional).
