LAST NIGHTS MEAL • FALL FILLED SOUP 🙂

Nothing says fall like butternut squash soup. This recipe was so easy! I put everything in one pot and while it did take about and hour to cook, I didn’t have to do anything besides stir it occasionally! Also I added some fun toppings like cranberries and roasted pepita seeds because why not. Oh also I have a new obsession with coconut flakes so I roasted those and added them on the side (not pictured). See the recipe for all the components below:

Butternut squash soup:
-1 butternut squash
-1 yellow onion
-3-4 cups vegetable broth
-2-3 tablespoons of olive oil
-salt and pepper (2 tbsp)
-2-3 tbsp maple syrup or honey
-rosemary (fresh is way better, 4 tbsp chopped)
-garlic clove chopped finely (or 2 tbsp garlic powder)
-1 cup quinua

Now time for the cauliflower which I put in the soup. (Make double to use as a spread for the bread!)
-1/2-3/4 cauliflower
-rosemary (3 tbsp chopped)
-2 tbsp olive oil
-2 tbsp nutritional yeast
– 2 tbsp black pepper
-1 tbsp garlic powder

Toppings:
– cranberries & pepitas roasted in rosemary and olive oil
-coconut flakes

There’s nothing much better than some warm banana bread and banana and almond butter toast to start off the morning. The banana bread recipe was a total experiment and it ended up turning out AMAZING while also being super healthy!! I am going to make y’all wait until tomorrow for the recipe hehe. Below is my super simple recipe for my date almond butter and banana toast!

Recipe:
-3 dates
-4 tbsp almond butter
-1 banana
-cinnamon
-2 slices of Ezekiel bread
.
Directions; :
Heat up dates in 3 tbsp water in the microwave and then add the almond butter to the dates + water and mix until a liquid consistency and then spread onto your toast, add bananas, and top with cinnamon!

Nothing sets you up for a good morning like some steel cut oatmeal … high in protein, nutrients, and the perfect base for some even yummier ingredients! Even though it does not feel like fall, I am already in that fall mindset so I made this oatmeal slightly fallish (Ik that’s not a word lol) by adding cranberries, cinnamon, and pumpkin seeds! Check out the recipe below 🙂

Ingredients:
-steel cut oats
-dates
-dried cranberries
-almonds
-pumpkin seeds
– @arbonne vanilla protein powder
-honey (or agave)
-optional, but a great option, is to add quinua!
.
Instructions:
-heat up oats with water and add in some chopped dates, cranberries, and cinnamon. Heat in pot until creamy. Serve in a bowl and top with desired ingredients (such as these!) and drizzle with honey or agave. Super easy, so delish!!!!

Things got eggy this AM.
Nothing like a good old egg sandwich to fuel you for the day. I decided to spice this one up by adding my own homemade creamy spicy cilantro sauce (recipe below). I also added some extra avocado and sriracha because as you may have realized, I’m obsessed with both those things. I also used sprouted grain bread, better known as Ezekiel bread by @foodforlifebaking , and I found it at @stopandshop ! To give the whole sandwich some extra crisp I threw it in the airfryer for about a minute, but this is completely optional! Anyways, scroll down to get a great breakfast recipe!

Ingredients:
-2 eggs (cooked sunny side up)
-Ezekiel bread
-avocado
-sriracha
-salt and pepper
-red onions (sliced thinly)

Creamy Cilantro Sauce:
-a handful of cilantro
-half an avocado
-half a can of chickpeas
-1 tablespoon mustard
-handful of red onion
-teaspoon of salt
-1 tablespoon nutritional yeast (optional)
– 1 tablespoon of Sriracha
-1 lime squeezed
-1 – 2 tablespoons of water depending on your desired thickness
*i used a regular blender
to blend everything up!
