Plantain + Corn + Chickpea Soup

This soup was one of my biggest cooking experiments yet and one of the most rewarding. This cumin spiced bowl had kicks of sweetness (from the corn and plantains), and spicy (from the cumin and sriracha) as well as some citrus (lime juice). I used a hand mixer to purée the corn and green peppers (which I did with a tad of hot water) and then just threw the soup mixture into a pot along with the rest of the corn, plantains, green peppers, and chickpeas. I squeezed some lime juice in and added some cilantro and sriracha to the pot, gave it a stir, then slowly added some oat milk (I personally think coconut milk would have been better, but I didn’t have any). this recipe had definitely made on my favorite recipe list! This Mexican salad got me feeling some type of way … full and satisfied. This is not the healthiest salad and is not vegan, but it is great for when guests come over since it’s sooo easy and versatile. See below for the ingredients.

Mega Mexican bowl. I assure you that this bowl will keep you full and energized for hours AND it’s so easy to make (literally took me 5 minutes)!! You just cook the veggie burger in a pan and add all of the other ingredients into it and let it simmer for a few minutes. Then if you want you can top with some avocado and sriracha like I did! Mexican Cauliflower Rice — today’s lunch was made in less than 5 minutes and in one pan, yet had so much flavor and spice that I needed to down a glass of milk (almond) to just finish it!! All of the base ingredients are non perishable items as well so you can buy them in bulk and make variations of this for weeks to come! See below for the recipe.

-frozen vegetable mix (I used the corn, edamame, and red pepper mix from you guessed it, Trader Joe’s)
-cauliflower rice
-canned tomatoes (optional if you use mild salsa, then you could just double the salsa)
