KALE + BEAN SALAD w/ AVO!!

This salad is a combination of what I had in my fridge, which was minimal. All that is required for this recipe is kale, grape tomatoes, any bean (I used brown pinto beans), avocado, red onion, a grain (quinua, farro, rice…), and cucumber. For a dressing I just used olive oil, red wine vinegar, and a touch of balsamic. Enjoy!!

Super yummy and very nourishing bowl filled with my favorite veggies. I just threw all the Ingredients in a pot with some vegetable broth and let the flavors really immerse themselves. I recommend adding the kale about 2 mins before veg combo is done so it does not loose all of its freshness (you can also use frozen spinach or kale though). I cooked the “soup” for about 30 minutes on medium / high heat stirring it every few minutes so it didn’t stick to the pot. If you are interested in the recipe scroll below.

Base:
-kale
-cauliflower
-ginger (1 tbsp minced)
-garlic (1 clove finely chopped)
-vegetable broth (2 cups)
-carrots
-cranberries
-quinua
-sweet onion
Toppings: lemon zest and while wheat baguette from @wholefoods with roasted heirloom tomatoes, olive oil, and salt.

As someone who always hated beets I was super surprised to have absolutely LOVED them when I gave them another try last week (thank you @tara_powell for reintroducing me to them!) My newfound love prompted this salad. I am so happy to have found another ingredient that I can incorporate into my salads!! This salad is a twist on my classic kale and tamari roasted tofu salad since it incorporates rosemary and as you know, BEETS. Also in the salad is the grain mix from @wholefoods that I previously shared, rosemary roasted pepitas, and chopped almonds. For the dressing I used lemon juice, Dijon mustard, balsamic glaze, and a dash of maple syrup:) See the ingredients in list for below!

BASIC KALE SALAD

Little late but better than never … thanks for the reminder @macyydecarlo to post! This was my lunch, but it could easily serve as a dinner if you add more tofu and grains to it! It was super simple and quick to make (i made it in the 5 mins between my classes haha). See the recipe below.

Dressing: I did cheat and didn’t make my own dressing whoops. Instead I used the Trader Joe’s green goddess dressing! I highly recommend. Also I squeezed half of a lemon on top to give it that extra something.

If this looks familiar to you that’s because it is. You know how I love my Krispy kale and cauliflower rice :)) for this dish I threw in the cauliflower rice and kale with some tamari and nutritional yeast glazed tofu, Brussels sprouts, cranberries, pepitas, and red onion seasoned with a whole lot of rosemary (inspired by @tara_powell) and some balsamic, olive oil, and sea salt of course. Oh and I almost forgot, I added some chopped garlic to give it that extra somethin’ super easy delicious and nutritious! (Wow I feel / sound like a mom) anyways, scroll below for the recipe.



Recipe:
-1 cup cauliflower rice
-handful of kale
-red onion (2 tbsp chopped)
-Brussels sprouts (1 cup)
-dried cranberries (2 tbsp)
-pepitas (2 tbsp)
-tofu (~8 small pieces)
-tamari (3 tbsp)
-nutritional yeast (2 tbsp)
-salsa (optional, 1 tbsp)
-balsamic glaze (2 tbsp)

I must admit it took a lot of resilience for me to take the time to take this picture before diving into this delicious salad. This salad is filled with protein (tofu and chickpeas), healthy fats (avocado), and vitamins, making it a well rounded, filling salad. For the chickpeas and tofu I did use and air fryer to crisp them up, but if you do not have one dw, you can use your oven to bake + broil them! See the recipe below.

Salad Ingredients:
-kale (finely chopped and massaged in olive oil+salt+pepper) I got a HUGE bag from @stopandshop for a great price!
-roasted chickpeas (recipe below)
-roasted (or air fried) tofu (recipe also is below)
-avocado
-pickled red onions (recipe below + on my story)
-sriracha cilantro lime dressing (recipe below)

Roasted chickpeas:
-1 can chickpeas
-3 tablespoons of smoked paprika
-1 tablespoon honey
-1 tablespoon olive oil
-sea salt
*toss in mixture and lay on a nonstick pan and bake until crispy (or air fry until crispy)

Tofu marinade:
-1/2 block of firmly pressed tofu
-3 tablespoons of Dijon mustard
-1 (or 2) tablespoons of honey depending on your desired sweetness
-salt + pepper
-1/2 tablespoon of olive oil
*roast in oven or airfryer until crispy (I like mine REALLY crispy)

Pickled Onions: (inspired by my favorite @frommybowl )
-1 red onion
-1 cup white vinegar
-1/2 cup red wine vinegar
-1/4 cup Dijon mustard
-2 tablespoons honey
-black pepper

Sriracha cilantro lime sauce:
-1/2 cup cilantro
-3 tablespoons lime juice
-1/2 medium avocado
-2 tablespoons sriracha (from @huyfongfoods )
-1 tablespoon tahini (from @traderjoes )
-1 tablespoon honey (if desired)
-black pepper

Last nights dinner • a classic Kale salad. Just made this salad with the ingredients I found in the fridge and it ended up being one of my best kale salads yet! Scroll below for the recipe:) and my go to salad dressing recipe!!
P.S- do not forget to massage the kale in olive oil (or water) first!
P.P.S- chip the kale SUPER finely for an even better salad!
