This Mexican salad got me feeling some type of way … full and satisfied. This is not the healthiest salad and is not vegan, but it is great for when guests come over since it’s sooo easy and versatile. See below for the ingredients.

-pickled red onions

Mega Mexican bowl. I assure you that this bowl will keep you full and energized for hours AND it’s so easy to make (literally took me 5 minutes)!! You just cook the veggie burger in a pan and add all of the other ingredients into it and let it simmer for a few minutes. Then if you want you can top with some avocado and sriracha like I did! Ingredients:
-black bean veggie burger ( can find anywhere, Trader Joe’s has a “cowboy” veggie burger that’s similar)
-1/2 sweet potato
-frozen corn
-salsa (I used habanero because I’m a spice lover)
-diced tomatoes (I used canned ones, you can omit this ingredient if you have mild salsa and just double the serving)
-avocado
-sriracha (also optional)
