Plantain + Corn + Chickpea Soup

This soup was one of my biggest cooking experiments yet and one of the most rewarding. This cumin spiced bowl had kicks of sweetness (from the corn and plantains), and spicy (from the cumin and sriracha) as well as some citrus (lime juice). I used a hand mixer to purée the corn and green peppers (which I did with a tad of hot water) and then just threw the soup mixture into a pot along with the rest of the corn, plantains, green peppers, and chickpeas. I squeezed some lime juice in and added some cilantro and sriracha to the pot, gave it a stir, then slowly added some oat milk (I personally think coconut milk would have been better, but I didn’t have any). this recipe had definitely made on my favorite recipe list!
