The perfect combination of sweet and spicy, air fried plantains, what could be better?!? To make this dish it cost me under $5 (and I had plenty of pepper and chickpeas to save for another recipe). For this recipe I used my leftover sriracha tahini sauce that I used in my previous kale salad. To give it an extra kick, and add some Mexican flavors, but if that doesn’t appeal to you, just add more coconut milk and some tahini (optional).

-green pepper

-quinua
-coconut milk
-tahini (optional)
-cilantro to top (optional)
