Trust me you have to be close with the person you are eating this burger in front of. Let’s just say it didn’t even look like a sandwich (is a burger a sandwich? Highly controversial topic Ik) by the end of this. I decided that I was in the mood for both some avocado and hummus so I made 2 different sandwiches on each half. One is more of a classic vegetarian high protein burger with quinua, avocado, pinto beans, and red onions as toppings and the other is more Mediterranean? (okay prob not Mediterranean? but that’s all that I could come up with..) anyways for both sandwiches the recipes are below.



*for BOTH halves I used Ezekiel bread from @traderjoes and their (which is seriously my favorite thing on this earth)

Classic vegan half:
-1/4 avocado
-red onion
-pinto beans
-quinua
-salt and pepper

“Mediterranean” Half
-hummus
-rosemary
-arugula
-red onion

I used the same balsamic marinated veggies (with some added red onions) and roasted them in the air fryer with some frozen peppers and onions, and cauliflower rice, and topped it with some air fried crispy kale and a high protein veggie burger from @traderjoes

Veggie GALORE sandwich

Let me tell you. The high protein veggie burger from Trader Joe’s is the best thing you will ever taste. My friend described it as tasting like breadcrumbs and I couldn’t agree more. It’s so delicious and nutritious!! Best combo 🙂 I also added some kale and frozen peppers and onions which I threw in the air fryer on the roast setting with some olive oil, sriracha, nutritional yeast, salt and pepper. You can also cool these on the stove top or in the oven super easily. I didn’t cook the red onions because i wanted an extra crunch but you can throw them in with the other veggies if you like them better roasted and toasted !! For the sauce I tried to make vegan mayo with aquafaba (chickpea juice) and kind of failed due to not actually measuring correctly, but it was good nonetheless. I will post the recipe for aquafaba mayo on my story later! For now, here are the ingredients for the sandwich.
