“SAUTÉED KALE AND VEG”

Super yummy and very nourishing bowl filled with my favorite veggies. I just threw all the Ingredients in a pot with some vegetable broth and let the flavors really immerse themselves. I recommend adding the kale about 2 mins before veg combo is done so it does not loose all of its freshness (you can also use frozen spinach or kale though). I cooked the “soup” for about 30 minutes on medium / high heat stirring it every few minutes so it didn’t stick to the pot. If you are interested in the recipe scroll below.

Base:
-kale
-cauliflower
-ginger (1 tbsp minced)
-garlic (1 clove finely chopped)
-vegetable broth (2 cups)
-carrots
-cranberries
-quinua
-sweet onion
Toppings: lemon zest and while wheat baguette from @wholefoods with roasted heirloom tomatoes, olive oil, and salt.

Decomposed veggie burger bowl. You may notice that this bowl is very similar to the veggie burger sandwich and that’s because it is. I used the same balsamic marinated veggies (with some added red onions) and roasted them in the air fryer with some frozen peppers and onions, and cauliflower rice, and topped it with some air fried crispy kale and a high protein veggie burger from @traderjoes

Lunch game strong: balsamic + mustard tofu and veg bowl.

This lunch is great because it can be prepped and cooked in less than 1/2 hour! I did use an air fryer to make the kale, vegetables, and tofu, but you can use the broil option on your oven to give them the same crisp, you just may need to use more olive oil. Also, not mentioned in the ingredients below is the quinua I added!!

Balsamic + Mustard Marinated Veggies:
-zucchini

-red onion
-brussel sprouts
-balsamic glaze (2 tblspoons per 1/2 cup water)
-Dijon mustard (2 tablespoons per 1/2 cup water)
-Black pepper
-red pepper flakes (optional)
*marinate overnight (or for a few hours)
*if air frying only include some liquid in the fryer with the veggies
*if cooking in oven you can put all of the marinade on the pan with the veggies to cook in and if u want to crisp them up you simply broil them for a few minutes once they’re cooked through
.
.

-mustard
-nutritional yeast
-black pepper

Mega Mexican bowl. I assure you that this bowl will keep you full and energized for hours AND it’s so easy to make (literally took me 5 minutes)!! You just cook the veggie burger in a pan and add all of the other ingredients into it and let it simmer for a few minutes. Then if you want you can top with some avocado and sriracha like I did! See the full recipe below.

Ingredients:
-black bean veggie burger ( can find anywhere, Trader Joe’s has a “cowboy” veggie burger that’s similar)
-1/2 sweet potato
-frozen corn
-salsa (I used habanero because I’m a spice lover)
-diced tomatoes (I used canned ones, you can omit this ingredient if you have mild salsa and just double the serving)
-avocado
-sriracha (also optional)
