This is the result of yet another day of putting off grocery shopping… but nonetheless it turned out great! Who knew freezer food could be so delish!!! Head below for the recipe!As for the cooking process, I kept things super simple. I cooked everything in a pot on the stove for about 20 minutes on medium and it turned out perfect!

Ingredients:
-frozen cauliflower (1 cup)
-frozen peas (1 cup)
-frozen cauliflower gnocchi (2 cups)
-frozen spinach (1.5 cups)
-oat milk (2.5 cups)
-nutritional yeast (1/2 cup)
-garlic powder (1 tablespoon)
-salt and pepper

Yet another roasted veggie salad with my previously used honey mustard tofu recipe to top it off. Easy to meal prep and eat throughout the week! I marinated the veggies in a combo of balsamic glaze and water and then just threw them in the air fryer with the sweet potatoes and ofc topped them with some sea salt and pepper 🙂 See the full recipe below !!
