Pizza is locked in place as my FAVORITE PIZZA EVER. That’s right I said it. It’s my 110% favorite. Best part is, it’s reasonably healthy! With the crunchy kale and the roasted peppers and onion, and a smear of date paste on the crust, this pizza has the taste buds going crazy! I usually put this on the cauliflower crust from Trader Joe’s, but I didn’t have any so decided to use a mini grilled pizza crust instead. This pizza takes me about 10-15 mins to make and is the most filling meal (especially when it’s on the cauliflower crust!). Making the cauliflower crust does take an extra 10-15 mins or so though, so don’t use it if you are in a rush! Below are the ingredients I used to create this recipe, but I often add to them depending on what I have in the pantry. Some of my favorite add ons not featured in this recipe are roasted chickpeas and pieces of roasted sweet potato!
-date Paste (made by mashing dates in hot water)
-peppers and onions (I use the Trader Joe’s frozen mix)
-cheese (sub nutritional yeast if vegan)
-red pepper flakes
