SHREDDED BROCCOLI AND CAULIFLOWER SALAD (w/ date paste!)

This recipe was so fun to make. It was a good reminder of summer freshness while easily pairing with warm comfort foods. Thanks to Trader Joe’s and their packaged broccoli slaw this recipe only took a few minutes to make. It’s also great for meal prep since the slaw does not get soggy easily. Recipe:
-1/2 package of broccoli slaw from Trader Joe’s
-1/2 cauliflower head finely chopped
-2 tbsp date paste
-1 tbsp tahini
-1/2 sliced avocado
-1 finely chopped date
-1/4 red onion chopped finely

Clearly you need a good knife for this recipe as you will need to finely chop many vegetables! This salad is soooo delicious and can be incorporated into a dish as a side slaw or even into a larger salad base as a topping that gives the salad an added sweetness and crunch. This is a classic turned vegan and healthy!!! I actually love sausage do being vegetarian / vegan can be hard … but this vegan sausage makes it so easy! It actually tastes just like sausage and browns amazingly. To add sweetness to this dish I added a few tablespoons of my date paste. The instructions to make date paste will be on my story. If you do not have dates you can use maple syrup or if you do not want any sweetness you can just use sriracha! If you want to make this the recipe will be below!

Recipe:
-1 pepper
-1 vegan sausage (from Trader Joe’s)
-1 tbsp tomato paste
-1/2 yellow onion
-2 tbsp date paste
-red pepper flakes
-salt + pepper
-drizzle of sriracha

Lately I have not been cooking a lot, which shocked me as I thought that being home would make me cook more, but I guess not! I think that it’s more the school work I have that has been shifting my priority from cooking fun meals to studying … meh. BUT don’t worry! There are still so many fast and easy recipes that you can make if you are in the same situation. These recipes are not vegan (Ik I’m sorry) but they are vegetarian and relatively healthy! Lentil spaghetti with pesto:
-lentil pasta
-Kirkland / any brand pesto (vegan cashew pesto from Trader Joe’s is great)
-arugula
-nutritional yeast or shredded Parmesan
-salt + pepper
-red pepper flakes

KALE + BEAN SALAD w/ AVO!!

This salad is a combination of what I had in my fridge, which was minimal. All that is required for this recipe is kale, grape tomatoes, any bean (I used brown pinto beans), avocado, red onion, a grain (quinua, farro, rice…), and cucumber. For a dressing I just used olive oil, red wine vinegar, and a touch of balsamic. Enjoy!!

Healthy leftover thanksgiving meal

Here is a recipe that I made a couple weeks ago actually but can easily be made with thanksgiving leftovers!! In this recipe there is sweet potato, string beans, yellow onion, tofu, and a yummy honey balsamic glaze! See the recipe below!

Recipe:
-sweet potato
-string beans
-yellow onion
-tofu
-black pepper
-almonds
-balsamic
-honey
-salt

Instructions:
-make honey balsamic glaze (3/4 balsamic, 1/4 honey)
-toss tofu in corn starch, nutritional yeast, and honey balsamic mixture and cook in oven for about 30 mins rotating frequently
-drizzle string beans and sweet potatoes with honey balsamic mixture and roast for 30 mins or so until cooked
-sauté onion in pan with a little bit of honey balsamic mixture
-add all cooked ingredients to a bowl and top with chopped almonds and a drizzle of honey balsamic OR leftover gravy 🙂

CAULIFLOWER ONION SALAD

This recipe combines all my favorite flavors: onion, onion, and more onion. Did I mention that I love onion? For this recipe I not only roasted a yellow onion, but added a decent amount of onion powder and @traderjoes onion salt (highly recommend). To the roast I added cauliflower and chickpeas. I roasted them in the airfryer for about 10 mins, but you can also roast in the oven (I recommend drizzling with olive oil If you do that). I topped this with @traderjoes spicy cashew dressing and some grape rainbow tomatoes. The base of this salad was arugula which added that peppery crunch. I also squeezed some lemon juice on top for some freshness:) head on below for the full recipe! Thank you for supporting this account !!!

-onion powder (2 tbsp)

(Olive oil- optional)

-toss cauliflower, onion, and chickpeas in onion powder, onion salt, olive oil, red pepper flakes, and lemon juice
-roast in an air fryer or in the oven until crispy (10-15 mins airfryer, 25-30 mins oven @ 350)
-add roasted mixture to arugula and top with tomatoes, lemon juice, and spicy cashew dressing (crushed cashew pieces would also be amazing on this)

“SOY CURLS AND BRUSSELS”

I don’t know about you, but I never heard of soy curls until recently and when I did I decided to purchase them on amazon right away! I will admit they sat in my pantry for about 2 months because I had no idea what to do with them, but recently I decided to open them up and give them a try and they are amazing! They are basically just soy protein shaped into chicken like pieces. All you do is soak them in water then either sauté them in a pan with oil or roast them in the airfryer like I did. Anyways, if you are interested in the recipe please scroll below:)

Reciped:
-Brussels
-soy curls
-sriracha
-broccoli (I used frozen)
-tamari
-salt and pepper
-sesame oil
-everything but the bagel seasoning
-cauliflower rice ( I didn’t have it, but it would be so good with this!)
*i just mixed everything together and roasted them in the airfryer for about 15 mins at 350! You can roast in the oven as well, but I recommend pan frying the soy curls if you don’t have an airfryer.

HEALTHY 8 ingredient BANANA BREAD.

I was just craving something sweet last night as I was watching Ratatouille (Yes the Disney movie) and since I am leaving for break soon I had just about nothing to work with except with some flour, sugar, overripe bananas, baking soda, aquafaba (leftover chickpea juice), maple syrup, some slivered almonds, cocoa powder, cinnamon, and coconut oil, but turns out that’s all I needed for this recipe! I made this in about 5 minutes popped it in the oven for 45 mins and ate about half of it right when it came out of the oven, after topping it with plenty of banana slices and drizzling it with maple syrup. I was so surprised by how good this was. I mean it was amazing (me eating 1/2 of it as evidence). If you want to give this recipe a try (which I recommend you do) scroll down!
Recipe:
-6 tablespoons of aquafaba
-2-3 ripe bananas
-1/4 cup water or plant based milk
-1/4 cup coconut oil
-1/2- 3/4 cup of sugar: brown, cane, coconut, etc.
-1/8 cup maple syrup (optional)
-2 cups flour (I used whole wheat, but oat of regular will work too)
-1 tsp baking soda
-1/8 cup cocoa powder (optional)
-3 tsps cinnamon (optional)
-3 tsps vanilla extract
-vanilla bean extract **
-1 tsp salt
-almonds to top
* I got vanilla bean extract from Trader Joe’s. You can use the tiniest bit and it adds so much flavor.

Instructions:
-whip aquafaba until white peaks form
-add banana and mash
-add all other ingredients and mix
-place in bread pan or reg cake pan like I did and coat with coconut oil to make sure it doesn’t stick
-bake at 350 for 45-50 mins until toothpick comes out clean

Super yummy and very nourishing bowl filled with my favorite veggies. I just threw all the Ingredients in a pot with some vegetable broth and let the flavors really immerse themselves. I recommend adding the kale about 2 mins before veg combo is done so it does not loose all of its freshness (you can also use frozen spinach or kale though). I cooked the “soup” for about 30 minutes on medium / high heat stirring it every few minutes so it didn’t stick to the pot. If you are interested in the recipe scroll below.

Base:
-kale
-cauliflower
-ginger (1 tbsp minced)
-garlic (1 clove finely chopped)
-vegetable broth (2 cups)
-carrots
-cranberries
-quinua
-sweet onion
Toppings: lemon zest and while wheat baguette from @wholefoods with roasted heirloom tomatoes, olive oil, and salt.
